There is something about this time of year that gets me in the mood for baking. I am sure part of it is all the yummy candles we have burning that smells like fresh goodies baking. Another part of it is that the cool weather makes me look to be home in my warm, cozy clothes and looking for comfort food. That means nice hearty meals and soft baked goods. Sometimes I want to bake but also want to put in minimal effort due to busy schedules or just plain lazy day sundays. We picked up this box of Blondie bar mix by Trader Joes. This recipe is super easy! Besides needing this box mix all you need is one egg and a stick of melted butter. Yes, a whole stick. I never said we were baking something healthy here.... I melted the butter for about 50 seconds. Mix everything together in a mixing bowl. It becomes a soft dough but not thin like cake. It is a bit thicker like a brownie. You press it all into an 8x8 pan. The box states to put parchment paper on the bottom and then spray it. That all seemed a bit much to me but I followed the directions anyways. Since the dough is soft but thicker you need to press it into the corners. It won't just fall into place. Then you bake them. The length of time depends on how soft or crispy you want. We like ours soft so they baked for 28 minutes but bake them at least 30 minutes if you like them crispier.
Take them out, let them cool and then enjoy!! These things were soooo delicious! Seriously, they tasted so good. They had a greasy bottom and were nice and soft with an ooey gooey center. These are seriously the perfect treat and super easy and quick to prep and make. Waiting for them to cook is what took the longest. Happy baking!
